Attune Foods October Cooking Challenge

As I was catching up on my Google Reader yesterday during lunch, something Heather posted caught my eye… Attune Foods is having a 3 month, 3 recipe competition. October is a dessert recipe, November is a savory recipe, and December is to make an original homemade gift recipe. Each recipe has to involve one of Attune’s pre-selected brands. I went back and forth for a few hours wondering if I could come up with something to submit before the October 20th due date… and then figured with last night being my final free night before my field coordinating duties start back up, why not? After work yesterday I headed to the grocery store and picked up semi-sweet chocolate chips and marshmallows along with Attune’s New Morning Organic Honey Grahams.

And then the magic happened! (Sounds so dramatic, right?! Winking smile) Winners get announced on November 4th, so wish me luck!!

Peanut Butter S’mores Bars

2 cups New Morning Organic Honey Grahams ground into large pieces (divided)
2 cups New Morning Organic Honey Grahams finely ground (divided)
1/3 cup creamy peanut butter
1 cup semi-sweet chocolate chips
1 tsp cinnamon
3 tbsp butter
1 10oz bag jumbo marshmallows

Turn the broiler on your oven to high.

Thoroughly coat a 9×13 glass baking dish with cooking spray. Pour 1 cup of the finely ground Honey Grahams in the bottom and make sure it’s evenly distributed across the dish. Once that’s set, pour 1 cup of the large Honey Graham pieces on top of the ground cereal and make sure its also evenly distributed. This is the bottom “crust”.

Melt the butter into a sauce pan on medium heat. Once melted, add marshmallows. (I set aside 7 marshmallows garnish the top of the bars later). Stir marshmallow and butter mixture frequently to prevent burning. Once marshmallows are almost melted, add cinnamon and peanut butter. Continue stirring. When the mixture is completely smooth, pour the mixture over the “crust” in the glass dish – making sure it’s evenly distributed.

Sprinkle chocolate chips on top of the marshmallow and peanut butter layer.

Evenly pour the remaining cup of large Honey Graham pieces on top of the chocolate chips. Top that with the remaining cup of finely ground Honey Graham evenly on top of that.

To garnish, slice the 7 jumbo marshmallows set aside in half and place on top of the cereal.

Place the dish under the broiler for about 5 minutes or until the tops of the marshmallow garnish are browned.

Let cool completely, and enjoy!
